Thanksgiving is so close! It is so close that I can pretty much smell the turkey, homemade rolls, and pumpkin pie. Yum-my. I am so excited to enjoy Thanksgiving with my family. We live states away from our extended families so being able to celebrate a holiday with them is a really big deal for us.
Country Crock sent me another great kit for their Casserole Club. Again I was asked to create my own version of one of their recipes. They sent me a recipe card for Thanksgiving Family Fave Veggie Casserole. It is basically a side dish of veggies, melty delicious cheese, and bread crumbs. I couldn’t wait to put my own spin on it.
One of my favorite things about Thanksgiving…is the leftovers. Is that weird? I LOVE Thanksgiving leftovers. So I thought of pairing my love of Thanksgiving leftovers with my Country Crock kit.
This recipe is super easy to throw together since it is made from leftovers, and it is so delicious. My 21 year old brother even mentioned, “Wow….this is really good.” Then again later that night he warmed up another helping and said “seriously this dinner is really good.” Sounds like a win to me!
It is also easily changed depending what you have on hand. I already had mash potatoes from a previous dinner, as well as corn, carrots, peas, and beans as a mixed veggie. You could use whatever veggies you happen to have. Make sure to mix in some Country Crock into your veggies, and potatoes to make them extra yummy! I also used rotisserie chicken this time because we haven’t cooked the big bird yet. But I will for sure make this again with our extra turkey. My family gobbled this dinner up.
Thanksgiving Leftovers Casserole {#Giveaway} #CountryCrockCasserole
Ingredients
- 2 T Country Crock Spread
- 1 1/2 C Panko Bread Crumbs
- 3 C Mash Potatoes
- 2 C Cooked Turkey or Chicken
- 1 1/2 C Mixed Veggies
- 1 C Cheese
Instructions
- Preheat oven to 350 degrees.
- Lightly coat a 13x9 pan with cooking spray.
- For the topping, melt Country Crock Spread and mix in bread crumbs. Set aside.
- Layer 1 C of the mash potatoes on the bottom of prepared pan.
- Next, layer the turkey, then mixed veggies, and then the remaining 2 C of mash potatoes.
- Top mash potatoes with cheese and previously prepared bread crumb topping.
- Bake for 30-40 min, or when bread crumbs are a golden brown and casserole is bubbling.
