Here in Western MA we are known for the amazing asparagus we grow. I love eating up as much of it as I can fresh off the farm stand. As a teen, my mom used to make Asparagus & Chicken Pasta and I loved it. She always served it cold but my favorite is fresh off the stove, served warm.
Ingredients:
- asparagus (one bundle)
- chicken tenders (one 2 pound package)
- 1 tsp poultry seasoning
- 4 cloves garlic; minced
- 2 tsp. coconut/avocado/olive oil
- 1 box your favorite pasta, I prefer whole wheat penne
- 1/4 cup parmesan cheese (optional)
- salt to taste
Bring water to a boil and add a pinch of salt. Add pasta. Cook according to packaging. Set aside.
Prep asparagus and chicken by chopping into bite-size pieces. In saute pan, heat oil. When hot, add in chicken and season with garlic, seasoning, and salt. Remove when fully cooked. Add in asparagus.
In saute pan, heat oil. When hot, add in chicken and season with garlic, seasoning, and salt. Remove when fully cooked. Add in asparagus and cook to preference. I prefer it sauteed for just a minute or two and removed while it still has a slight crunch. My husband prefers it left on longer with the lid closed so it cooks fully through. Either way is fine.
Bring all ingredients together and stir well. Serve. Add parmesan cheese, optional.

Notes
This is also a great meal for meal prepping. I love to make this in large batches and then portion out meals for the week. It’s great cold or microwave for a minute to warm.
