Chocolate Scotcheroos #Recipe {My Family’s Favorite Summer Treat}

Everyone has that one dessert recipe that they absolutely love.  It is your go to treat for family parties, BBQs, or family nights.  It is always a crowded pleaser and gobbled up so fast you never have any leftovers to take home.  During the summer I especially love recipes that don’t require me to turn the oven on.  It is already so stinkin’ hot!  I don’t need to be adding heat to my house.

My favorite go to summer treat recipe is Chocolate Scotcheroos and is absolutely looooved by my entire family.  My husband might ask for them more often than my 5 year old does.  They are a delicious chewy combination of peanut butter, chocolate, and butterscotch.  It is quick, uses just a few ingredients, I don’t have to turn the oven on, and it makes a good amount to serve to a lot of people.

Scotcheroos are also super close to my heart because my grandmother would always make them during the summer when we were kids.  Does anyone else have memories that are tied with food?  To me scotcheroos just scream summer at my grandmas house.  We would go over to her house and could always count on scotcheroos to be on the table next to the knox blox(aka jello jiggler squares). To this day she will still make them for us if she knows we are coming over.

I love making them for my family now and we can have our own little summer memories with some scotcheroos on the side.  Scotcheroos are ridiculously easy to make.  They come together super quick and you probably already have a lot of the ingredients in your pantry right now!  If I am taking them to a party they are easily doubled to fit a large jelly roll pan.  I promise if you bring scotcheroos to your next family get together they will be the hit of the party and you won’t have any to take home with you.  …which is a good or bad thing, depending on how you look at it. 😉  I hope y’all are having a wonderful summer, enjoy!

Chocolate Scotcheroos Recipe {My family's favorite summer treat}

Really yummy treat that you don't have to turn your oven on for. Perfect for picnics, pot lucks, and BBQ's.

Course Dessert

Ingredients
  

  • 1 C. Sugar
  • 1 C. Light Corn Syrup
  • 1 C. Peanut Butter
  • 6 C. Rice Krispies Cereal
  • 1 C. Chocolate Chips
  • 1 C. Butterscotch Chips

Instructions
 

  • Cook 1 C. sugar, and 1 C. light corn syrup in a saucepan over medium heat until mixture boils.
  • Remove from heat and stir in 1 C. peanut butter.
  • Mix in 6 C. rice krispie cereal and then press into a buttered 13x9 pan.
  • While rice krispie mixture is cooling in pan melt chocolate chips and butterscotch in the microwave stirring occasionally until melted and well blended.
  • Spread chocolate over cereal mixture.
  • Chill about 5 minutes until top is firm. Cut into bars.

Notes

This can be easily doubled for a 15x10 jelly roll pan.
