The Best Peanut Butter Cookies Recipe

Confession- I’m not a huge peanut butter fan. My hubby LOVES it but the rest of us hardly ever touch it. We are a nut free school district which doesn’t help since the boys can’t bring any of it to school so through the years we’ve just removed it from our regular diet. Until now. I found the Best Peanut Butter Cookies I’ve ever eaten.

When I say eaten I mean devoured. By the handful. We made several batches and they were gone so fast. If you manage to save some they’d fair well in an airtight container for a few days. These cookies aren’t crunchy at all. They are soft and chewy the way peanut butter cookies should be.

This recipe is from my most favorite cookbook I’ve told you about for years. It’s The America’s Test Kitchen Family Cookbook. If you don’t own it, you should. Along with the other books they sell. I’ve not only come to LOVE every recipe I’ve tried out of it but I’ve even bought a few things off their recommendations (like my food processor). It’s way cheaper than what I paid on our affiliate Amazon. I also own the baking & healthy one and I’m about to invest in their slow cooker one too!

Anywho. Back to the Best Peanut Butter Cookies I’ve ever had.

Another tip is that we used Skippy’s Extra Crunchy, Super Chunk Peanut Butter. I didn’t pay attention to what I grabbed when I was buying it. They recommended Skippy and didn’t realize I bought this one but I feel it definitely made a difference in the taste of these cookies.

The Best Peanut Butter Cookies {#Recipe}

Ingredients
  

  • 2 1/2 cups all-purpose flour
  • 1 tsp salt
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 2 sticks softened butter
  • 1 cup packed light brown sugar
  • 1 cup granulated sugar
  • 1 cup extra-crunchy peanut butter
  • 2 tsp. vanilla extract
  • 2 large eggs

Instructions
 

  • Pre-heat oven to 350˚F.
  • Whisk the flour, salt, baking soda, and baking powder in a large bowl and set aside.
  • Beat butter and sugars in your stand mixer bowl combined with your paddle attachment. Mix on medium until light & fluffy (3-6 minutes). Beat in the peanut butter until fully combined (30 seconds). Beat in the vanilla, then the eggs (one at a time) and then scrape down the bowl.
  • Slowly add in flour mixture while beating together on low.
  • Take 3 tbs. and make dough balls with it. Place evenly on baking sheets (preferably on a Silpat) about 2 inches apart. Use a fork to make a criss-cross pattern on top by pressing it down on the dough balls.
  • Bake until golden and centers are puffed and beginning to deflate (10-12 minutes). Let it for 10 minutes then eat warm or transfer to wire rack and let them cool completely.
  • MAKE AHEAD:
  • The dough can be made up to 3 days in advance and stored in the fridge covered tightly. If freezing the dough, freeze in dough balls and then baking at 300 for 17-22 minutes (on the tray frozen). Frozen dough balls are good for up to one month.
