Cheesy Chicken Rotini with VELVEEA® & RO*TEL®

Between the end of this pregnancy, sick kids, and hubby working late our dinners have been all over the place. I often feel I get discouraged when we’re down a family member on making a bigger meal. In my mind I struggle finding it worth making a good meal if not everyone is going to eat it.

In reality making a good meal doesn’t always have to translate into a big deal (or a big mess). Sometimes it is just a matter of find a good one pan meal.

When going through the Weeknight WOW meals on the VELVEETA® & RO*TEL® website I came across the Cheesy Chicken Rotini recipe and knew instantly it was something my family would like and I’d like making! So back to my Cheesy Chicken Rotini recipe. It stated 40 minutes but it definitely didn’t take that. Maybe it took 25 minutes and I added a step.

First get water on the stove and bring to boil for your rotini. Just so you know this is the step I added as the site has you do it in one pan but I can’t boil chicken so I added the noodles at the end. Cook rotini as directed on box.

In a separate pan cut chicken into one inch pieces and cook for several minutes in a pan sprayed with PAM. When fully cooked add 1/2 cup water from your pasta noodles and your bag of frozen vegetables to pan. Stir. Cover.

Now cube your VELVEETA® into small pieces and add to pan. Stir occasionally while keeping pan covered.

Now add your Rotini and RO*TEL® and stir. We used the whole box of Rotini and ended up doubling the amount of VELVEETA® cheese.

This looks delish, doesn’t it?

It was so easy to make and literally saved me on a night that I didn’t want to cook, my kitchen was actually clean, and my kids were really hungry. I love meals that also get a both chicken and vegetables in them so this meal was a double win in my book!

INGREDIENTS(Per site)
1-1/2 lb. boneless skinless chicken breasts, cut into 1-inch pieces
2 cups water
3 cups rotini pasta, uncooked
1 pkg. (16 oz.) frozen broccoli, cauliflower and carrot blend
1 can (10 oz.) RO*TEL® Diced Tomatoes & Green Chilies, undrained
1/2 lb. (8 oz.) VELVEETA®, cut into 1/2-inch cubes

MY CHANGES
I used full box of Rotini noodle
1/2 C. water
16 oz VELVEETA®.
