Baked Apples with Cranberries & Apricots Recipe

My boss is always bringing these baked apples to work for breakfast and when she heats them up in the microwave next to my office they smell amazing. I finally asked her how she makes them. She didn’t have a written recipe so I kinda had to just test it out on my own but they were so good!

First core several apples in a bake safe dish. I used a smaller corningware dish.

Add orange juice. Just slightly more then it takes to cover the bottom of the pan. Make sure there is some showing in the centers of the apples as well.
Sprinkle with cinnamon and nutmeg. I like my cinnamon so I just shook making sure to cover the area, the nutmeg I sprinkled much lighter.
I then added hand fulls of dried cranberries and apricots.
I also added some quick oats.
After I took the above photo I decided i wanted more oatmeal and I did add another good sized handful. I baked for 45 minutes at 375.
You’ll know they are done she said by the wrinkled skin or if you see the skin split on one of them. I scooped out an apple and some of the mixture into smaller dishes and we all enjoyed them.
