Snow Day & Making Cupcakes in Ice Cream Cones {Recipe}

We had a snow day yesterday. Well, a snow day in terms of no school & work. The snow actually never came. We got an inch. It started snowing at 3:30pm. I love when they hold so much faith in the weatherman! The day actually came in really useful! We got many of our Valentine’s Day projects done. Having the day together we had time to prep for Gavin’s preschool party tomorrow and Johnny’s on Friday.
We made our own Valentine’s. Aren’t they cute?
Johnny made these ones All. By. Himself. So proud of him!
We bagged them up and put them into their Puppy Dog Valentine Boxes they made and put them by the door.
We made Gavin’s class strawberry flavored ice cream cone cupcakes too! Johnny will get them as well but I’ll make them after work tonight so they are fresh.
I’ve always wondered how to make them so I thought I’d share since they were super easy!

1 pkg of Betty Crocker Super Moist Cake Mix – non swirl flavor
(water, vegetable oil, and egg called for above)
30-36 ice cream cones w/ flat bottoms
Preheat oven to 350
Make batter as instructed on box. Pretty pink just perfect for Valentine’s!
Place ice cream cones in muffin trays.
Fill up 1/2 to 2/3 of the cones. I filled the stand of the cone.
Since the batter is thick I was able to just use a big spoon to easily pour it in.
Bake 20-25 minutes until cake tester or tooth pick runs smooth.
Let cool for an hour before applying frosting!!!
If you do it too soon you will pull the cake off the cone!
For some reason I always thought there was some secret involved. Maybe its the kind of batter you need.

Transporting these will be the fun part. They are too tall for my cupcake holder and my cake holder has no sides. I think I’m going to tin foil a shoe sized box (not a shoe box) lol and give the frosting to the teachers to do themselves….also allowing kids to chose if they want it. Johnny actually hates frosting.
