I had told all of you that I had planned on making some of the recipes with you guys and sharing them here. For Christmas I made her Mini Cheesecakes and let me tell you they were so easy and SO good!First preheat the oven to 350 degrees. Crush 1 1/4 cup of graham crackers. I handed them to my 9 year old with a meat tenderizer and he had some fun!
Mix in 1/4 cup of sugar and 4 tablespoons of melted butter and mix. This is your crust.

Cool in pan for 5 minutes, then move to wire rack.
Careful this sounds easier then it is. You can’t tip them over and they are really hot.
Then refrigerate over night. If you have the awesome cupcake holder I always talk tell you about you can keep them right in the trays.
These were so yummy that I never even had a chance to take a picture of them once I put the strawberries, cherries, and blueberries (canned pie filling) on top.
