Mini Cheesecakes Recipe

Remember my review of the Make Ahead Meals For Busy Moms by Jane Doiron. If not you can read it here. I had told all of you that I had planned on making some of the recipes with you guys and sharing them here. For Christmas I made her Mini Cheesecakes and let me tell you they were so easy and SO good!

First preheat the oven to 350 degrees. Crush 1 1/4 cup of graham crackers. I handed them to my 9 year old with a meat tenderizer and he had some fun!
Mix in 1/4 cup of sugar and 4 tablespoons of melted butter and mix. This is your crust.

Line your cupcake pans with liners and take tablespoons of the graham mix into each liner. I did some with just 1 tablespoon because it seemed like a lot. My 1/4 measuring cup fit perfectly to flatten and form a good crust. See picture.
I doubled my recipe so I was able to make a lot. I did some in foil and some in plain.
Next, beat your softened cream cheese until fluffy. Then add in your eggs, lemon juice, and remaining sugar and beat until smooth and creamy like below.
The recipe stated to add 3 tablespoons to each muffin cup but I just found it easier to fill each one without measuring. They do not rise when baking so you won’t have to worry about it coming up and over the edges while cooking.
Bake for 17-19 minutes.

Cool in pan for 5 minutes, then move to wire rack.
Careful this sounds easier then it is. You can’t tip them over and they are really hot.
Then refrigerate over night. If you have the awesome cupcake holder I always talk tell you about you can keep them right in the trays.
These were so yummy that I never even had a chance to take a picture of them once I put the strawberries, cherries, and blueberries (canned pie filling) on top.

I received many compliments on these and I definitely plan on making them again.

1 1/4 c graham crackers, crushed
1/4 c sugar
4 T butter, melted
1 (8oz) pkgs cream cheese
2 large eggs
2 T fresh lemon juice (I used fake)
1/2 c sugar
1 (21oz) cherry or strawberry filling
