Bruschetta Chicken Skillet Recipe

I made this recipe last night and it was so good! My boys that don’t like tomatoes even ate up! In a large skillet (I am using a 12 inch) add 1/2 cup Italian Dressing and on a medium setting. Add 3 good size garlic cloves, minced.
If you don’t have a Garlic Press I recommend this one, from Pampered Chef of course!
Add 2 medium red peppers chopped.


Add Chicken. Cover for 10 mins or until Chicken is cooked. (165 degrees). I know my pic is sideways but blogger is refusing to let me correct it is what it is…

Once chicken is cooked, remove from skillet and add 2 cans diced tomatoes with juice. Stir.Add 2 bags instant rice (cooked).

Stir. Add one fresh tomato diced.

Add some chopped basil leaves. Hopefully your basil plant isn’t as pitiful as mine.

Add chicken back and stir. Cover with Mozzerella Cheese.

    Isn’t Pampered Chef’s garlic press the best invention ever? I love mine and use it ALL the time. And just got the pots and pans (looks like you have them too)…aren’t they great!
