Here’s a recycled recipe post! I have been doing some behind the scenes work on my blog. Categorizing things properly is one of them. This post is from 2008! I had just started blogging and I wasn’t posting much. This was the very first recipe I shared on my blog. Not quite sure what to categorize it under, but thought since many people are digging into their pumpkins this weekend it was a fitting re-share!

So, I found this recipe on one of my favorite recipe sites: The Pioneer Woman. If you haven’t checked her and her Marlboro Man out….please do. Make sure you have a napkin handy b/c I swear you WILL drool!
So she had this recipe on Pepitas…aka…pumpkin seeds. I never had these before but figured I liked every other kind of seed so why not. I did just buy a bunch of pumpkins. So when my boys gutted them I asked them to put the “guts” in a bowl.

Separate the flesh part from the seeds, then rinse them off in a strainer. I had to use 2 baking sheets b/c they took FOREVER to dry out. I left out over night.
These are great! We used to do this back home.

I also love fresh roasted pumkin seeds and thought you like to know that you can take them directly from rinsing to the baking sheet and into the oven! No waiting to day, no oil.
Now, as for spicing them up…I use sea salt, garlic and onion powder, and sometimes parmesean cheese!!!
Empty-nesters, haven't had in years but you make me want to run out and get a fresh pumpkin.
I often do the same with the seeds from spagetti squash, only after roasting, and when the squash in on our plates with some butter, salt & pepper, I will sprinkle the roasted seeds on top. Makes for a delicious and interesting veggie treat. The empty shell is also great for drying, adding beach sand and some tea candles when decorating the table for dinner.
