Asparagus & Chicken Pasta Recipe

Ingredients
  

  • 2 lb chicken breast
  • 1 bundle asparagus
  • 1 tsp poultry seasoning
  • 4 cloves garlic minced
  • 2 tsp coconut/avocado/olive oil
  • 1 box pasta
  • 1/4 cup parmesan cheese optional
  • salt to taste

Instructions
 

  • Bring water to a boil and add a pinch of salt. Add pasta. Cook according to packaging. Set aside.
  • Prep asparagus and chicken by chopping into bite-size pieces. In saute pan, heat oil. When hot, add in chicken and season with garlic, seasoning, and salt. Remove when fully cooked. Add in asparagus. 
  • In saute pan, heat oil. When hot, add in chicken and season with garlic, seasoning, and salt. Remove when fully cooked. Add in asparagus and cook to preference. I prefer it sauteed for just a minute or two and removed while it still has a slight crunch. My husband prefers it left on longer with the lid closed so it cooks fully through. Either way is fine. 
  • Bring all ingredients together and stir well. Serve. Add parmesan cheese, optional.

Notes

This is also a great meal for meal prepping. I love to make this in large batches and then portion out meals for the week. It’s great cold or microwave for a minute to warm.
