Asparagus & Chicken Pasta Recipe {Great Warm or Cold}

Here in Western MA we are known for the amazing asparagus we grow. I love eating up as much of it as I can fresh off the farm stand. As a teen, my mom used to make Asparagus & Chicken Pasta and I loved it. She always served it cold but my favorite is fresh off the stove, served warm.

I prefer it sauteed for just a minute or two and removed while it still has a slight crunch. My husband prefers it left on longer with the lid closed so it cooks fully through. Either way is fine.

Notes

This is also a great meal for meal prepping. I love to make this in large batches and then portion out meals for the week. It’s great cold or microwave for a minute to warm.
