Chicken Fajitas Recipe (Better then Chili’s!) Less then 15 minutes!

Thought I’d share a super fast, yummy recipe for Chicken Fajitas that has been a huge hit in my house! It’s super fast and from start to eating time will take you only 15 minutes! For this Chicken Fajitas Recipe you’ll first need to take your green and red peppers and cut them into slices and throw them in a 2.5 qt dish that is microwave safe (and has a cover). Then add onion your onion slices as well.
Sprinkle well with a Southwest seasoning spice mix. I used the Pampered Chef Southwest Seasoning Mix here but years later I’m now making my own clean taco seasoning from the Against the Grain Cookbook. A packet or your own, it all works. Season to taste. I use about 2 tablespoons.

Take either a package of chicken tenders or cut 4 chicken breast in long strips. These I used are chicken breast cut because the grocery store was out of tenders. Shake the seasoning over the chicken well.
Look at those yummy spices!
Cover and put in the microwave for 10 minutes on high!

Serve with fajita wraps & cheese. Add anything you like really! My favorite part is the only dish I have to clean is the one I cooked it in! These fajitas are sooooo good! I love Chili’s fajitas and these are even better! I don’t eat the onions and peppers when they serve them at the restaurant. I don’t like onions AT ALL really but I eat them in this Chicken Fajitas Recipe all the time. This is a Favorite recipe that my whole family loves!

By the way, the awesome dish I’m using to cook it in is the 2-1/2-Quart Casserole with Glass and Plastic Lids from Corningware. This awesome 3 piece dish that is microwave, dishwasher, and oven safe!

        It was so good! Since my fiance is more of a fan of spice, I took a bit of a detour in terms of spice, but the result has been consistently delicious! I ended up using paprika, adobo, hot sauce, and black pepper to marinade the chicken, and tossed the concoction into a hamburger bun. I think you may have inspired a new staple in my diet as well! XD

    When/how do you microwave the vegetables? There are no instructions. Do you microwave them separately or do you put the uncooked chicken on top of the veggies and microwave all at the same time? I am wanting to use this in a high school cooking class and need explicit directions for them. Thanks.

      The vegetables are underneath the chicken, and it is all microwaved at the same time. Easy as it gets. 🙂

    The instruction say to put the vegetables in a microwave dish. THe photo shows the vegs in a dish. The next instruction says to sprinkle the chicken with seasoning. The photos LOOK LIKE the vegs and chicken are in 2 different dishes. There are no instructions that say “microwave veggies first” nor “layer chicken on top of veggies.” Do the veggies and chicken get microwaved at the same time or at 2 different times. Since I want to use this in a high school class, believe me, I need to have explicit detail in the recipe. Thanks.

      These are all in the same dish. The chicken goes on top of the vegetables. Sprinkle with seasoning between each layer and then cover. Microwave for 10 minutes.
